Ingredients:
- 2 cups long-grain rice
- 1 cup mixed vegetables (carrots, peas, green beans, sweet corn)
- 1/2 cup diced liver
- 1 onion, chopped
- 2-3 tablespoons vegetable oil
- 1-2 teaspoons curry powder
- 1 teaspoon thyme
- 4 cups chicken or beef broth
- Salt and pepper to taste
- 1 bell pepper, chopped
- 2-3 green onions, chopped
Instructions:
Step 1:
Rinse the rice in cold water until it runs clear to remove excess starch. Drain and set aside.
Step 2:
Heat 1 tablespoon of oil in a pan over medium heat. Sauté the diced liver until browned, then remove and set aside.
Step 3:
In the same pan, add the remaining oil and sauté the chopped onions until translucent. Stir in the mixed vegetables, curry powder, and thyme, cooking until the vegetables are tender.

Toast the rice in the pan with the onions and garlic to enhance the aroma, then add the chicken broth.
